Why do assistants in fish and chips shops always seem to put salt on first then wash it off with the vinegar?

The salt will actually stick to the chip better if they are moist from the oil they are cooked in, and the vinegar doesn't wash all off.Why do assistants in fish and chips shops always seem to put salt on first then wash it off with the vinegar?

first,,,,?? isnt all your fish shipped packed IN salt..I believe Sole and Haddock (?) whitefish..


I can imagine the vinegar might desolve the salt better and leave a tart after taste.
